Kara's Homemade Appetizer..SO GOOD!
Recipe for Kara's Homemade Appetizer:
Canned corn niblets
Canned black beans
Tortilla chip scoops or Crackers
2/3 Red pepper
1/3 Red onion
Olive oil
Lemon juice
1/2 tsp. Minced garlic
Black pepper
Drain corn, rinse black beans in strainer with cold water, cut red pepper and red onion into tiny pieces. Mix all in a bowl. Season with some olive oil, lemon juice, minced garlic and black pepper (quantity -your preference). Serve in scoops or on crackers.

Gym Invite!
I sent out an email to all before but just in case...
My gym (Planet Fitness) which is around the corner allows me to bring a guest with me for free. I plan on going at least 3 times a week, so if you would like to join me just let me know!!

Here is a recipe I tried this weekend....
Rosemary-Garlic Swordfish, (Combine 2 minced garlic cloves, tsp. crushed dried rosemary, 1/2 tsp. coarsely ground pepper and 1/4 tsp. salt; rub over 6 oz. swordfish steak. Pan-sear over medium-high heat 4 minutes on each side. You can substitute fresh tuna for swordfish.)
Cooked Long-Grain Wild Rice, 1 cup
Roasted Plum Tomatoes, (Cut tomatoes in half lengthwise; sprinkle with salt and pepper. Drizzle with 1 tsp. olive oil. Bake at 400 degrees for 30 minutes or until tender.)

The fish dish is about 4 weight watchers points
The rice is about 3 weight watchers points
Roasted Plum tomatoes is 1 weight watchers point
